Welcome!

The vibrant, multicultural country of Singapore is home to an equally distinctive blend of foods from all across Southeast Asia. The perfect synthesis of the best of Asia makes Singapore a food paradise.

The variety and flavors of Singapore food owe much to its heritage as a commercial hub for Southeast Asia. Cuisines brought in by the early immigrants around the region were assimilated into many fascinating dishes.

One prominent hybrid cuisine to arise from the racial mingling is the Peranakan cuisine – the blending of culinary traditions of early Chinese immigrants and that of the local Malays when they intermarried. The Peranakan cuisine, known fondly for its distinctive taste that includes spices like lemongrass, coriander and galangal, is a treat to the palate.

Besides the Peranakan cuisine, there are many handed down immigrants’ signature recipes. Through time, these recipes were heartily adopted as truly Singaporean. From the Indians, we have Roti Prata, the Malays, Nasi Lemak, and within the Chinese community various dialect groups have contributed to the food scene with food like Hainanese Chicken Rice, Teochew Porridge, Cantonese Chow Fun and Hokkien Prawn Noodles. Indeed, it is within this hotchpotch of races and communities that the Singaporean cuisine is as richly varied, as it is multicultural.

Today, Singapore has earned a reputation as a food paradise in Southeast Asia. Here at Merlion Restaurant, we bring you a wide selection of authentic Singaporean fare using the very best ingredients.
